Whole30 Eats, Week 4

Well, after a stellar week last week, I kind of hit a wall in Week 4 where I had absolutely ZERO creativity to come up with any new meals. So, I repeated some of the previous weeks' meals, such as stuffed avocados, omelets, and soups that we still had leftover. 

That being said, I did discover something new that is going in my log of things to remember and make again later: Plantain Tostados and plantain tortillas.

I stumbled upon the second recipe after I made the first and was wishing they had turned out slightly more flexible and tortilla-like. Lo and behold, the same person had posted a recipe for each style- so whichever way you like them, here you go!

Keep in mind that plantains are somewhat banana-ish, so they have a slightly sweet flavor. I personally think it's a good flavor, but just be aware of that in terms of flavor combinations.

Mmm, now I want plantain chips.
